Karakteristik gelatin yang dihasilkan dari bahan baku ceker ayam adalah rendemen 8%, kadar air 5,08%, kadar abu 2,55%, kadar protein 64,05%, dan kadar lemak 14,74%, Residu kandungan logam Cu 3,02 ppm, kadar Zn 11.10 ppm, Kadar As 0.065 ppm, dan kadar sulfit 0,00016 ppm; Ph 5,61, kelarutan 100%, viskositas 4 cP, dan kekuatan gel 109,17 bloom. Dari segi karakteristiknya gelatin ceker ayam tersebut berpotensi sebagai alternatif pemenuhan kebutuhan gelatin  halal yang dibutuhkan oleh masyarakat.</note>
